Stone-milled organic bagel bakery serving 18 bagel varieties, baked goods, breakfast, and lunch.
Great Bagel & Bakery has been producing bagels in the tradition of a classic bagelry since opening in 2011, owned and operated by Lara and Robert Swan. The bakery stone-mills its own flour from organically grown grain, producing 18 varieties of bagels alongside pastries, breads, and breakfast and lunch menus. Bagels are milled, boiled, baked, and made to order. The bakery also offers house-made cream cheeses, catering packages for events of any size, and a retail shop selling its own primo flours and gift cards. Wholesale flour is available to chefs, bakers, and restaurateurs. The bakery hosts workshops and educational events, including sourdough and fresh-milled baking classes. Learn more on their About Page.
Great Bagel & Bakery mills its own wheat on-site using a New American Stone Mill built in Elmore, Vermont. It partners directly with a small number of fifth-generation organic farms to grow grain specifically for the bakery, cutting out intermediaries between field and mill. Named farm partners include Doubting Thomas Farms in Moorhead, Minnesota and Janie's Mill in Illinois. The bakery describes its farm partners as practicing regenerative agriculture, an approach it characterizes as putting more back into the environment than it takes out. The stone-milling process grinds all three components of the wheat berry together: the bran, the germ, and the starchy inner endosperm.
