Urban specialty vegetable farm growing greens, roots, and seasonal produce on one-third of an acre in Goshen, Indiana.
Clay Bottom Farm is an urban farm founded in 2006 by Rachel Hershberger and Ben Hartman. Operating on one-third of an acre, it grows specialty vegetables year-round using two greenhouses, and sells all of its produce within two miles of the farm. Crops include salad greens, kale, spinach, pea shoots, microgreens, carrots, beets, radishes, turnips, cucumbers, tomatoes, fennel, and garlic. Customers can buy through a CSA, at the Goshen Farmers Market, or through wholesale accounts at local restaurants. The farm also includes native wildflower fields and fruit and nut trees. Ben Hartman is the author of several books on lean farming and offers a Lean Micro Farm Masterclass for other growers. Learn more on their About Page.
Clay Bottom Farm grows food on a tightly managed one-third-acre plot using a two-step no-till bed preparation process. Two greenhouses extend production across all seasons. The farm is actively replacing plastic mulch and landscaping fabric with living mulches, including clover and cereal rye seeded between crop rows, in order to reduce waste and support soil health. Beds are grown directly into compost. The farm describes its approach as lean farming, a system focused on minimizing waste and increasing efficiency in growing and harvesting operations.
