Texas Wagyu butcher shop selling individual cuts, bundles, and a monthly butcher box — purebred, pasture-raised beef from a family ranch.
Blue's Butcher Shop was founded by Clint Phelan to carry forward the beef-raising tradition started by his father Doug at Phelan Farms in Lockhart, TX in 1973. We sell purebred Wagyu beef in individual cuts — including ribeyes, filets, Texas strips, Denver cuts, and burger patties — as well as curated bundles and a monthly butcher box. All cattle are born, raised, and finished in Central Texas. We oversee every step from pasture to plate. Beyond beef, we also sell original branded merch including hats and tees. Our herd is purebred Wagyu, pasture-raised, grass-fed, hormone-free, and antibiotic-free. All cattle are born, raised, and finished in Central Texas — no shortcuts. We partner with local Hill Country ranches that share our regenerative farming approach, which the site describes as keeping soil fertile, water clean, and pastures vibrant. Phelan Farms, the source ranch, was founded in 1973 and is rooted in what the site calls 'deep reverence for the land and its cattle' and a commitment to sustainable stewardship.
