Family-run Kentucky farm raising 100% grass-finished, dry-aged beef from Red Angus cattle.
Bluegrass Beef is a family farm in Shelby County, Kentucky, owned and operated by Josh and Melissa Ballard. Josh is a veterinarian who heads the cattle program, while Melissa manages sales and marketing alongside farm duties. The farm got its start in 2007 with a small beef herd and finished its first grass-finished steer in 2011. Bluegrass Beef raises Red Angus cattle on pasture and sells 100% grass-finished beef, dry-aged a minimum of 14 days for tenderness and flavor. Beef is humanely harvested at a local, USDA-inspected processing facility, then sold frozen and vacuum-sealed. The operation has no full-time employees beyond the family. Bluegrass Beef raises its cattle using regenerative farming methods, with healthy soil as the foundation of the system. Cattle are managed through rotational grazing: pastures are divided into small sections and the herd is moved through them in sequence, giving each section time to recover. During winter months the farm uses strip grazing of stockpiled forages and bale grazing to extend the grazing season and build pasture quality. Cattle are never confined and are never given growth hormones or hormonal supplements of any kind. The farm takes a natural approach to animal health, using de-wormers and vaccines sparingly. Antibiotics or other medications are used only when illness requires treatment, and any treated animal is removed from the beef program. Cattle are grass-finished, typically reaching harvest weight at 24 to 30 months of age.
