Arizona family farm growing heritage wheat berries, whole grain flour, and fresh mushrooms since 1939.
BKW Farms is a Wong family operation that has been farming in Arizona since 1939. The farm grows heritage and modern varieties of wheat, including White Sonora, Khorasan, Durum, and Hard Red Wheat, selling them as whole grain wheat berries and milled flour. BKW also raises Blue Oyster and Lion's Mane mushrooms, available fresh and dehydrated. Products are available for local pickup and delivery to the Tucson and Phoenix areas. The farm supplies ingredients to restaurants and hospitality venues across Arizona. Customers can order directly through the farm's online shop. Learn more on their About Page.
BKW Farms uses organic methods across 294 acres of fields dedicated to heritage and modern wheat varieties. After each harvest, grains are sent to a laboratory for nutritional testing per FDA requirements, and stored in a climate-controlled processing and storage facility. Mushrooms are grown year-round in a retrofitted climate-controlled shipping container using BKW's own White Sonora wheat berries and wheat straw as the growing media, and are cultivated in reusable HDPE pails. BKW partners with the University of Arizona Agriculture Center on mushroom-growing techniques. For irrigation, the farm has used only Central Arizona Project (CAP) water since 1995, maintains 50 miles of concrete-lined irrigation ditches, and laser-levels its fields to ensure even water distribution and eliminate run-off. Wheat straw left after harvest is either used in mushroom production or turned back into the ground to help prepare the soil for future crops.
