Abby Jane Bakeshop was started by Abby Love, a Louisiana native with 12 years of experience in the restaurant and baking industry. The bakery sits inside the Barton Springs Mill facility in Dripping Springs, and a nine-foot window into the mill lets guests watch millers at work while they enjoy a latte or morning bun. The menu features a rotating selection of breads, pastries, sandwiches, treats, and sweets, built around heirloom and heritage grains. Custom cakes are also available. The shop describes itself as intentionally gluten-full, leaning into whole-grain baking rather than away from it.
Abby Jane is committed to using stone-milled, organic flours in all baked goods, sourcing heritage grains grown in Texas and milled on-site at the adjacent Barton Springs Mill. The bakery uses whole-grain flours that retain the bran and germ of the wheat berry, which the team says aids digestion compared to commodity white flour. Slow fermentation techniques are also part of the process, used to pre-digest the flour before baking. The bakery partners with Barton Springs Mill in support of what the site describes as sustainable farming and milling practices. The shop produces roughly 200 to 300 loaves per week.
