Fifth-generation family farm raising Wagyu beef, sold by the steak, half-calf, or monthly subscription.
Weise Farms is a fifth-generation family farm in Serbin, Texas, where Becky and Tim Weise have raised Wagyu beef on land their family has stewarded since 1854. The farm raises full-blood and high-percentage pureblood Wagyu, as well as F1 Wangus and Wagolais crosses. Customers can buy individual Wagyu steaks, reserve a half-calf or whole cow for the freezer, or join The Meat Club, a recurring monthly beef subscription. Beyond beef, the farm also offers noodles, pasta, and tallow skin care products made on the farm. Learn more on their About Page.
Weise Farms raises its Wagyu cattle without added hormones, antibiotics, or steroids, and every animal is born and raised on the farm's own land in Lee and Fayette Counties. Calves spend their first 18 months on pasture, then go through a 300-day slow finish on a heritage-style blend of barley and spent grains, a method the farm describes as inspired by traditional Japanese finishing practices. Cattle never leave the farm's care from birth to harvest and are processed at inspected facilities. The farm uses DNA-tested breeding stock with documented AA results for the stearoyl-CoA desaturase (SCD) genetic marker, which is linked to differences in beef fat composition. Registered breeding sires include KR ITO TAYASU E232 and LRX-TX EMPEROR U308.
