Round Rock Honey Company was started in 2003 by Konrad and Elizabeth Bouffard, who began with four hives in their backyard and sold at Austin-area farmers markets every Saturday. Today the company produces true wildflower honey from apiaries across the Texas Hill Country. Their guiding principle: "That which the bees give us, we give you." Beyond honey, they sell honey-based soap and skincare, beekeeping supplies, and offer honey house tours, beekeeping classes, honey harvest classes, and mead-making classes. Their honey is available through their storefront, online, at multiple weekend farmers markets, and at retailers including HEB, Trader Joe's, and Walmart.

Round Rock Honey is raw and unfiltered. After each harvest, honey is poured through a stainless steel sieve to remove bee legs, wings, and wax caps, but it is never heated or filtered beyond that. Honey is extracted from the hives by centrifuge at room temperature, a process the company says preserves pollen, trace minerals, and complex sugars that occur naturally in the honey. The company harvests on a regular basis, season and weather permitting, and bottles promptly after each harvest. They focus on wildflower honey rather than varietal honey, accepting unpredictable yields in favor of quality. Honey is packaged in BPA-free plastic.
