Mighty Greens Farm is a family-run vegetable farm in Elburn, IL, started by Carlos and Katie Palomares in 2014. The farm specializes in gourmet salad blends and microgreens, grown in soil year-round, alongside a wide variety of seasonal vegetables during the outdoor growing season. Produce includes tomatoes, carrots, beets, peppers, squash, cucumber, eggplant, green beans, and more, with storage crops harvested in late fall to extend local availability into winter. In place of a traditional CSA box, Mighty Greens Farm offers a flexible, customized subscription program. Mighty Greens Farm grows all of its crops in soil and follows organic farming practices. The farm is a no-spray operation, meaning it does not apply any pesticides, herbicides, or fungicides, whether synthetic or organic. Year-round production is maintained through a heated greenhouse for winter growing, supplemented by multiple unheated greenhouses that extend the spring and fall seasons. The farm grows approximately 30 different crops over the course of a year, and late-fall storage crops help supply local produce through the winter months.
