Bakery and café milling its own flour from Northeast-sourced grains, serving breads, pastries, and breakfast and lunch.
Kneads is a bakery, café, and in-house stone mill owned by Chefs Daniel and Brittany Moreno, both graduates of the Culinary Institute of America. Daniel trained at Restaurant Daniel in New York, a two-Michelin-star restaurant in Paris (L'Abeille at the Shangri-La Hotel), and Blue Hill at Stone Barns. Brittany refined her baking skills at Amy's Bread, Gramercy Tavern, and two Paris bakeries before joining Blue Hill at Stone Barns as pastry sous chef. The café serves breakfast and lunch built around ingredients sourced from local farmers. Breads, pastries, cakes, and pies are available for walk-in purchase and pre-order, and Kneads also offers catering and a wholesale flour program. Learn more on their About Page.
Kneads mills its own flour in-house on a stone mill made by New American Stone Mills, a Vermont-based company whose equipment is used by bakers across the United States and internationally. All grains are sourced from Northeast farms. The flour lineup includes whole grain rye, whole grain spelt, whole wheat bread flour, and whole wheat all-purpose flour, sold in retail and bulk sizes, with organic or organic-practices grain sourcing noted across the range. Bread baking relies on slow, natural fermentation, and baguettes are shaped by hand. Granola is made in small batches using organic oats and Hudson Valley maple syrup. Brittany Moreno's approach to the flour program draws directly from her time at Boulangerie Berthe in Paris, where she learned the practice of working with local millers to source high-quality flour.
