Family-owned stone mill specializing in heritage and ancient grain flours
Hayden Flour Mills is a family-owned stone mill founded in 2009 by father-daughter co-owners Jeff and Emma Zimmerman. The mill revives heritage and ancient grains, including White Sonora, Emmer Farro, Einkorn, Durum, Spelt, Khorasan, Rye, Purple Barley, and Heritage Oats, milling them in small batches into flours, whole berries, and breakfast grains. Its product line covers bread flours, cake and pastry flour, pizza flour, polenta, and gluten-free options. Hayden Flour Mills operates a retail shop in Gilbert and offers wholesale, a Grain School program, and a recurring Bread Fest event. The business grew from farming 30 acres to over 400 acres of heritage grain. Learn more on their About Page.
Hayden Flour Mills uses stone milling, an old-world process in which whole grains are crushed between rotating stones in small batches. This method preserves the natural oils of the grain and retains the germ, bran, and endosperm. No bleach, enrichments, folic acid, bromates, malts, or additives of any kind are used in the flours. All wheat and corn are non-GMO and chemical-free; crops are grown without chemical fertilizers, pesticides, or glyphosate. The mill runs on 100% solar power. Heritage grain varieties are drought-tolerant, require no chemical inputs, and are suited to desert growing conditions. The business describes its farming approach as regenerative, noting that the deep root systems of its heritage wheat sequester carbon and revitalize soil nutrients.
