Con' Olio Oils & Vinegars is a family-owned, woman-owned boutique specializing in premium extra virgin olive oils (EVOO) and aged traditional balsamic vinegars, with two tasting room locations in Austin. Founded in 2009 by Tabatha Conarko, it operates as Austin's first premium olive oil tasting bar and is the only certified Ultra Premium Olive Oil Tasting Shop in Central Texas, a designation earned through testing by Modern Olives. Both locations feature a try-before-you-buy concept with complimentary pours from stainless-steel fusti. Beyond oils and vinegars, Con' Olio carries a pantry of gourmet goods and offers public classes, private events, virtual tastings, a quarterly subscription box, and corporate gifts. Con' Olio sources extra virgin olive oils from producers in both the northern and southern hemispheres, rotating with the harvest calendar to keep its selection as recently pressed as possible. For every oil and vinegar it carries, the business provides harvest dates, origin, producer profiles, chemistry data, and organoleptic taste profiles. All oils and vinegars are certified Gluten Free, Kosher, Non-GMO, and Organic. The business works exclusively with producers who can supply full traceability: if that information cannot be provided, the product is not sourced. Owner Tabatha Conarko holds olive oil sensory tasting certifications from the Organizzazione Nazionale Assaggiatori Olio di Oliva (ONAOO) and the UC Davis Olive Center, and regularly travels to Europe to maintain direct relationships with producers.
