Overview

Foie gras farm raising Muscovy and Mulard ducks using Basque gavage traditions, with a full line of duck products.

La Ferme Basque de Charlevoix is a family-run duck farm in Saint-Urbain, Québec, rooted in the culinary traditions of the French Basque Country. It was founded in 1999 by Isabelle Mihura and Jean-Jacques Etcheberrigaray, both originally from the Basque region of France, and has been operated since 2022 by Philippe Dorval and Vicky Boily. The farm raises Muscovy (Barbary) and Mulard ducks for foie gras and a range of duck products, including confit legs, duck breast, foie gras blocks with Espelette pepper, duck pâté with foie gras, and duck rillettes. Products are certified Aliments du Québec and are available through an on-site boutique and online. The farm also carries Basque linens and Espelette peppers.
