Dos Lunas makes specially aged raw cow's milk cheese rooted in a Venezuelan family recipe. The business was born after our founder spent six weeks on his father's dairy farm in the foothills of the Venezuelan Andes, learning to turn fresh raw milk into cheese. Back in Texas, he set out to replicate his father's queso fresco recipe — and because FDA/USDA regulations require a 60-day aging process for raw milk cheese, the whey re-absorbs into the curds, producing a distinctly creamy result. Our lineup includes aged cheddars, blue cheeses, and other varieties, with aging ranges from one year up to 15 years depending on the variety. We also offer cheese subscriptions and event catering.

Our cheese is made from raw cow's milk sourced from Stryk Farms in Schulenburg, Texas, where Bob Stryk and his family raise a herd of approximately 60 cows that graze on grass and roam freely in the sunshine. All of our cheeses are made with vegetable rennet, making them vegetarian, and the milk is Non-GMO. Because our cows eat different grasses across seasons — with varying moisture content — the flavor of our cheese naturally shifts to reflect what the herd is grazing on at any given time of year.
